Jane’s Garlic Hummus

Last week I came down with the flu.  I’m pretty sure it’s the first time I’ve ever had it.  It wasn’t fun.  While self-diagnosing* online, I discovered an herbal remedy for lessening the duration and severity of the flu calls for garlic and beta carotene.  Naturally, the first thing I thought of was garlic hummus and carrots.  I didn’t feel like looking up a recipe or pulling out the food processor.  So I made it up, using the blender.  And it is, hands down, the best hummus ever!  So I decided to share:

1 15oz can  garbanzo beans (chickpeas), drained and rinsed
1/4 c tahini
2 T olive oil
2 T water
juice of 1 lemon
4 cloves garlic, more or less to taste
1/4 t paprika
salt, to taste

1. Blend tahini, one tablespoon of olive oil and half the juiced lemon until smooth.
2. Add chickpeas, one third at a time, blending until smooth.
3. Add remaining olive oil and lemon juice, water and garlic, blend until smooth.
4. Add paprika and salt, to taste.  Enjoy!

This can be made in a blender or a food processor, I found my Ninja did a better job than my Kitchen Aid ever has.  I swear I don’t know why I have the food processor, the $50 Ninja was one of my best kitchen buys ever.

*I felt sick at work so I went to our Wellness Center, the nurse there told me it was the flu.  But that was directly after I denied having a flu shot.  So I thought she was trying to make me feel guilty for not getting one by telling me my sudden cough and fever were the flu.  It was pretty easy to see, once I started looking around online, she was right.
