Zuckerkuchen/Sugar Cake

The final of several recipes from my bridal shower. This is a traditional German cake served during “coffee & cake” around 4pm. You can get it at just about any bakery in Germany.

3 3/4 c flour
3 heaping teaspoons dry yeast
1 c warm milk
1 egg
1/3 c sugar
6 T unsalted melted and cooled butter
1 pinch salt
1/2 stick melted butter
1/2 c sugar

1. Prepare dough in bread maker, or mix dough by hand and let it rise for at least an hour in a warm place.
2. Preheat oven to lowest setting (170 F).
3. Spread dough on greased cookie sheet. Turn oven off. Place cookie sheet in oven, let dough rise another hour.
4. Remove from oven and turn oven to 400 F.
5. Brush dough with melted butter. It’s ok to let it pool in places. Sprinkle sugar over dough.
6. Bake for 6 minutes on the middle rack, then 2 more minutes on the top rack to caramelize the sugar. Remove from oven right away to cool.

This cake dries out quickly, it is best eaten fresh or even warm. Good for dipping into tea or coffee if it dried out.
