Zucchini Bread

The fourth of several recipes from my bridal shower. I have since made this bread with zucchini from my farm share and shared at work for a co-workers birthday. So amazing, and well received!

3 c all-purpose flour
1 t baking soda
1/2 t baking powder
1 t salt
2 c sugar
1 c vegetable oil
3 eggs
1 t vanilla extract
1 c sour cream
2 c zucchini, shredded
1 c chopped walnuts

1. Preheat oven to 350 degrees F. Lightly grease two 9×5 inch loaf pans.
2. In a large bowl, sift together flour, baking powder, baking soda and salt.
3. In another large bowl, beat together the sugar and oil. Stir in the eggs one at a time, beating well with each addition, then stir in the vanilla.
4. Blend this mixture into the flour mixture, alternately with the sour cream; stir just to combine.
5. Fold in the zucchini and nuts; mixing just enough to evenly combine. Pour batter into pans.
6. Bake in preheated oven for 80 minutes, or until a toothpick inserted into the center of the loaf out clean.

You can also include a handful of chocolate chips. When I made for my co-workers, I did not have vegetable oil, so I substituted for apple sauce. I also ran out of sour cream halfway through, so it’s 1/2 c sour cream, 1/2 c plain greek yogurt. This worked out well.
