Strawberries and Cream Cookies

The first of several recipes from items we had at my bridal shower! These cookies were featured in the Christian Science Monitor (link), and looked way too good not to try out ourselves.

2 c hulled strawberries
1 c (2 sticks) butter, at room temperature
8 oz cream cheese, at room temperature
2 c sugar
1 egg
1 t vanilla
3 c flour
1 t baking powder
1 t salt

1. Preheat oven to 350 F and line 2 baking sheets with parchment paper.
2. Dice strawberries to the size of chocolate chips.
3. Beat butter and cream cheese until combined, add sugar and beat until light and fluffy.
4. Add egg and vanilla, and beat until combined.
5. Add flour, baking powder and salt 1 c at a time with mixer on low speed. Beat until smooth and combined.
6. Using a spatula fold in the strawberries until evenly distributed.
7. Drop by tablespoons about 1/2″ apart on cookie sheet.
8. Bake on upper rack in oven until the cookies are lightly browned on the bottom and tops are firmed, but not brown, about 10 to 12 minutes. Cool for 2 minutes on cookie sheet, then cool on wire rack.
