Coronation Chicken Salad

The second of several recipes from my bridal shower. This is Kate’s favorite. She started making it after a friend of ours who moved to England hosted a tea party featuring this sandwich.

4 chicken breasts, boneless, skinless, poached and diced
1/2 c mayonnaise
1 T curry powder (more or less, to taste)
2 T mango chutney or apricot preserves
1/2 yellow onion, finely diced
1 stalk celery, finely diced
1/4 c currants or raisins
1 T vinegar: cider, champagne or whatever
juice of 1/2 lemon
salt and pepper to taste
1/4 c cashews for garnish
watercress, washed and de-stemmed for garnish

1. Combine all ingredients in large mixing bowl.
2. Serve on your favorite bread or spread on crackers.
