Quinoa-Edamame Salad w/ Sesame-Ginger Dressing

This recipe came to me in part of the “Drop 10” diet in Self Magazine. I’m not following the diet, but some of the recipes have been hits. This works cold or hot, I prefer cold. It’s the perfect quick lunch these days. This recipe makes 1 serving, I just make the suggested serving on the package for quinoa and include a package of frozen shelled edamane, then just add veggies as I see fit, but if you’re into portion control, you can follow the recipe more closely. =)

1 c quinoa, cooked
2/3 c edamame, shelled & cooked
1/4 c carrots, shredded
1/4 c cucumber, chopped
2 t toasted sesame oil
1 t rice wine vinegar
1 t soy sauce
1/2 t ginger, grated
1/4 t garlic powder

1. Combine quinoa, edamame, carrots and cucumber.
2. Separately, combine toasted sesame oil, rice wine vinegar, soy sauce, ginger and garlic powder. Toss with quinoa mixture. Serve hot or cold.

I just made a batch of this for lunches this week. I didn’t have cucumber so I chopped up a yellow bell pepper. It’s a very colorful mixture!
